If the 60 amp current probe was left on the main battery cable during cranking, would this induce enough voltage in the probe to damage it?

I don’t think so, we talk about mV and each coil has a magnetic saturation limit.

The 60 amp probe will survive this....Actually its reading will max out around 200 amps and these readings are pretty accurate and in line with the measurements of a high current clamp. If you wanted to avoid the signal from the 60A clamp being clipped off than you may want to ac-couple it.
